For the past four years Aroma Nativo has been forging ties between unknown Colombian coffee farmers and renowned roasters from around the world.
This year Luis Marcelino founder of Aroma nativo goes a step further by launching the Veci Project : a collaborative coffee production between coffee producers who have good agronomic practices but who lack of infrastructures, space on the farm to process their coffee and Aroma Nativo that contributes with the knowledge and processing facilities located in the south of Huila and the Department of Quindio.
After picking the ripest drupes and hand selecting them this Colombia variety passed through 120h anaerobic fermentation in cherry, then depulped and again 36h fermentation in sealed barrels with inoculated geisha lactic bacteria. After 20 days of sun parabolic dry, it is bagged in grain-pro and stored for 3 months in a cooler warehouse to stabilise.
Specialty coffee, 100% Arabica, carefully grown in a precise geographical area, carefully picked, processed, selected, and freshly roasted, in small batches, specific to the origin and method of processing.
