Castillo Variety

• Origin: Castillo is a hybrid developed by the Colombian National Federation of Coffee Growers (FNC), designed to be more resistant to coffee leaf rust and adapted to Colombia’s growing conditions.
• Characteristics: The Castillo variety is appreciated for its resilience and is widely cultivated in Colombia. It is known for its fruity notes and balanced acidity.
• Flavor Profile: Typically, Castillo delivers flavors of red fruits, caramel, and may also develop nutty undertones, similar to Caturra but with milder acidity.
