Soaking: First thing, 85% well ripe and 10% over ripe cherries selected. The cherries immersed in water tank to remove the floaters.
Drying method: The cherries dried on raised beds. On each bed, they put 120Kg of cherries with thickness as thin as possible. The raised beds were placed on location with more wind blow and less sunlight. The drying goes slowly for 30 days under shade net.
Improved Process: In this process, we removed the floaters by soaking the cherries for 15 minutes in water. This technique helps to remove immature and less density beans that can cause bitterness. Instead, it opens more room for the well matured and over ripe cherries. It also helps to boost the fruitiness of the coffee.
